Ernest started work in John Stevenson's Butchers shop when he was 14 years old. He was responsible for cleaning up and making sure everything was clean.

Ernest started work in John Stevenson’s Butchers shop when he was 14 years old. He was responsible for cleaning up and making sure everything was clean. If the underneath of work tops were still wet when they checked then they had to be cleaned again. He used to go after school and help from the age of 12.

Ernest worked in the Beeston Hill store when he first started and during World War II. He was born in Hunslet though and also worked in the store at 228 Hunslet Road. When he married, Ernest and his wife moved in behind the shop on Hunslet Road, a back to back with the toilet half way down the street

In the early 90s, he and his wife moved to establish their own butchers shop in Upper Accommodation Road. They were corporate butchers and supplied many of the schools and hospitals in Leeds. They would produce 10-12 tonnes of sausages a week
